Happy Friday Friends!
If you are in Canada, like myself, this has been the last week of summer before “back to school” commences. Whether you are a homeschooling family like us, or you send your children to a Brick and Mortar School the shift of pace in the home always seems to happen before we are ready for it. Quick easy meals are always a blessing to have readily available, ones that you know will be start to finish in 40 minutes or less. I will have to warn you though that I don’t cook very often with recipes, and I am not one to write out a recipe of the things I make. However, I do believe I do alright at converting what is in my brain to recipe form when asked “how do you make this?” Most of the recipes I share will probably be like what I just described. Others may be a recipe that I have used and we all love and enjoy. Play around with the ingredients if there is something your family doesn’t fancy. And no offence taken if you look at a weekly recipe spotlight and gag at the thought of it.
Enough of my babble though, here is this weeks Family Favourite- as our children have named it Fish with Sauce.
Tilapia and Cous Cous
Frozen Tilapia Loins* (enough to feed your family)
Mayonnaise
Lemon or Bottled Lemon Juice
2-3 Cloves of Garlic or Garlic Powder
Dried Dill
Olive Oil
Salt & Pepper
Cous Cous
Boiled Water
Veg of choice for the side (we usually have peas)
Preheat oven to 350 degrees. Line a sheet pan with parchment and place fish on the pan. Drizzle each loin or filet with olive oil and then season with salt and pepper.
Next, in a mixing bowl add a spoon of mayo for each piece of fish you will be cooking. (If you have 6 pieces of fish you will need about 1/2 cup of mayo, give or take)
To the mayonnaise crush in the cloves of garlic, or if using garlic powder add 1-2 tsp, juice of 1/2 a lemon or 1 tbsp of bottled lemon juice, and 1-2 tbsp of dried dill. Mix together and spoon a dollop onto each loin and spread over the top.
Bake in the oven for 20 or so minutes, or until the fish is done.
While the fish is cooking, prepare your side vegetable of choice and boil the kettle.
To a glass bowl add 1-2 cups cous cous (again this will depend on the size of your family). When the kettle has boiled measure the same amount of water into the bowl and lid the bowl with a plate that will cover the top and allow the cous cous to steam and absorb the water. Fluff with a fork after 8-10 minutes.




Remove fish from the oven, and dish up your protein, vegetable and cous cous! We like to eat our cous cous drizzled with olive oil and seasoned with salt and pepper to taste.
There you have it. Fish with Sauce!
